I have used lavash bread but tortilla or thin pita bread can be used.

For the cream cheese mix
- 3 tbps of lumpfish roe
- 100 g of cream cheese
- 1/2 cucumber (seeds off), thinly cut, using a mandoline or a vegetable peeler
- Chives, chopped
- Salt and fresh pepper to taste
- Soft Lavash flatbread
- Lettuce or any green leave, chopped if rough.
- Cherry or mini-plum tomatoes
- Or black olives, pitted
Make the cream cheese ahead of time and place in the fridge for 1 hour or 2.
Spread over the lavash bread. Place the green leaves. You can even add shredded carrots at this point.
To serve, cut into about 2 cm thick slices/pinwheels. Cut the tomato lenghtwise (or not), as well as the olive, place them on the top and fix the whole pinwheel with a toothpick.
